“German-born chef Thomas Frebel fell for Japan during Noma’s pop-up in 2015, and promptly returned, launching Inua in 2018,” explains the new book. ”It’s set on the ninth floor of an office tower, yet Copenhagen studio Oeo have managed to turn a bland workspace into an inviting venue, mixing ‘Hiroshima’ chairs by Naoto Fukasawa and ‘Akari’ paper lamps by Isamu Noguchi with Danish design, including Finn Juhl lounge chairs and Dinesen floors. 

“One level below, Frebel practises a New Nordic approach in experiments with a vast array of ingredients in the high-tech test kitchen.
