Restaurant André reaches for the (Michelin) stars

Chef André Chiang’s eight-point culinary philosophy wins him two Michelin stars in the new Singapore guide

The Taiwanese chef and Phaidon author André Chiang may have trained in Paris, yet he took his skills back east, establishing some of the most highly regarded restaurants in both Taipei and Singapore following his own eight-point personal culinary credo, octaphilophy: salt, texture, memory, pure, terroir, south, artisan and unique.

Now the francophone world has followed in Chiang’s footsteps, with the new Michelin Guide to Singapore awarding the chef’s eponymous Singapore establishment, Restaurant André two stars. Following the announcement, which took place yesterday at The Fullerton Hotel in Singapore, Chiang paid tribute to both his patrons and staff, who played their part in the restaurant’s rise.

“This award is dedicated to my entire Restaurant André brigade,” said Chiang, “and we will continue to move forward with passion, persistence, and perseverance. We have enjoyed sharing our cuisine with you since day one and hope that with each visit, you feel the humility, the creativity, and the passion of our brigade. We look forward to continuing this beautiful journey together and to making Singapore proud!”
